FISH BREWING STORY
From its home in beautiful Olympia, Washington, Fish Brewing Company has been hand-crafting ales of Northwest proportions since 1993. Founded by Crayne and Mary Horton and a few dozen local investors, Fish began operations humbly. With a 15-barrel brew house, and two 15-barrel fermenters, we brewed for our neighbors up and down Puget Sound. Growing steadily since, Fish is now an award-winning craft brewer with distribution throughout the great Pacific Northwest and beyond.
Today, three distinct brands make their home under Fish Brewing Company's roof: Fish Tale Ales, Spire
Mountain Cider and Leavenworth Biers.
In the beginning there were Fish Tale Ales, northwest-style beers born in our brewpub on Jefferson Street. It wasn't long before our brewery outgrew its cradle, though. So in 1996, we moved brewing operations across Jefferson Street and into the historic Skoog Building.
Spanning the block from Jefferson to Cherry Street, the Skoog building once housed Olympia Knitting Mills, and more recently, Skoog Manufacturing which built and serviced lumber mill machinery. The building was so spacious that the move provided ample room for both brewing and bottling. And bottle we did, introducing our first six packs in 1997.
What happened to our original brewing space back across Jefferson Street? It's now our flag-ship Fish Tale Brewpub. In 2016 it was awarded the title, Best Brewpub in Western Washington and has been featured on the Food Networks show Diners, Drive-in & Dives. And yes, we still do serve the Bangers & Mash that were featured on the show.
With the turn of the century, we stepped in a greener direction with the release of our first certified organic beer. With an eye ever toward the integrity of our recipes, we use only the finest Washington sourced organic ingredients. The results are truly delicious ales that salute organic farmers and all the goodness they bring to our tables.
In 2001, a year-long courtship culminated in the marriage of Fish Brewing and Leavenworth Biers, the Northwest's Original German-style craft biers. These are biers at ease in the Northwest with the urge to explore the outdoors.
Three years later, the Fish family celebrated another happy addition, Spire Mountain Ciders, the nation's oldest operating commercial craft cider maker. Today, award-winning Spire Mountain's cidery occupies its own special space in the brewery on Jefferson Street.
2016 brought the next big addition to the Fish Brewing family, with the addition of Vitis spirits, with unconventional spirits “from the ground up”. What’s so unconventional about our spirits? Simply put, we make spirits that are different, unique, and creative.
Thanks to all our employees and every one of our customers, Fish Brewing continues to grow today! We’re now up to nearly 25 styles of beer that are sold in more than 15 states, and a half-dozen kinds of hand-crafted spirits ... and we still have some ideas in the back of our collective heads.
If you haven’t had the chance to taste Fish Brewing, find a beer or cider, track down one of our spirits or visit one of our restaurants! We believe that hand crafted beverages, fine food, and enduring friendships are what life in the Great Pacific Northwest is all about. We've been proud to be a part of that tradition, and thank you for joining us in it.
